Duke Raleigh Hospital, a campus of Duke University Hospital, is seeking an independent and creative food professional to join its team.

 

Catering Duties and Responsibilities

*Monitors catering requisitions daily to ensure timely delivery of service

*Produces cold food items for catering events.

*Proactively monitors and plans catering set ups to ensure flawless service

*Transports department items throughout hospital and campus when assigned – floor stock, supplies, catering, physician food items, specialty items, etc.

*Assists with picking up catering events in the evening hours. This may require the use of a department van. Must have driver’s license and pass a training class.

*Ensure high standards of quality and sanitation by utilizing established tools and quality monitors – temperature logs, labeling, thermometers, etc.

*Meets weekly with Chef/Manager to review following weeks catering events

*Cleans catering area and equipment as required

*Stores and properly maintains all equipment, food trucks, transporting vehicles in a professional, clean and safe manner

*Notifies management of any food shortages (by vendors or observed during routine daily duties), equipment breakdowns, unsafe conditions, refrigeration issues, storage concerns, etc.

*Knowledgeable in HAACP * Hazard Analysis and Critical Control Point) standards and NC State regulations

 

May also help cover retail during slow periods.

Work requires one year institutional food preparation experience.

 

Level II

Work requires two years institutional food preparation experience.

Knowledge, Skills, and Abilities

Level I

* Ability to read and write English *Ability to understand and follow instructions, to interpret recipes, to use fractions to modify proportions and to mix, measure and/or prepare ingredients. *Ability to demonstrate safe food handling practices and to follow safety procedures for using equipment and chemicals.

Level II

* Same as Level I plus willingness to learn new skills (ie. computer)

*Ability to review recipes and instructions for possible errors relating to specified quantities, ingredients, proportions or mixtures. *Ability to troubleshoot equipment malfunctions.

*Ability to provide instructions and train other employees

Distinguishing Characteristics of this Level

Level II Involves more complex preparations of foodstuffs and more review for possible errors. Serves as lead worker and trainer of other employees as directed.
